Melt Owner to Open New Restaurant Where Pacifico Was

It was announced Tuesday that Melt owner George Paxos plans to open another restaurant in The Promenade Shops at Saucon Valley in Upper Saucon Township. The new restaurant will be where the former Latin fusion eatery, Pacifico, was located.

Melt owner George Paxos plans to open another restaurant in The Promenade Shops at Saucon Valley, and the new restaurant will be where the former Latin fusion eatery, Pacifico, was located, the Express-Times reported Tuesday.

Pacifico closed last week, after nearly six years as an anchor eatery along the perimeter of the Upper Saucon Township lifestyle center.

In addition to Melt, which is located in The Promenade Shops directly opposite where Pacifico was located, Paxos also owns the upscale Blue wine bar and restaurant in Bethlehem Township.

Late Tuesday afternoon, at least one work ladder was already visible inside the closed Pacifico.

The Express-Times story also stated that unredeemed Pacifico gift cards will be honored at two area restaurants: Mesa Modern Mexican in Easton and Tapas on Main in Bethlehem.

What a shame! I loved Pacifico! Thank goodness Mesa and Tappas are still around. I wish George Paxos all the best on his new venture, however.

I loved Pacifico too!! I'm sad to hear of this! I'm not familiar with Mesa and Tappas. Does anyone know if these are owned by the same person as the just-closed Pacifico? I've also not eaten at Melt as of yet, but it has been on my "to try" list. If I'm understanding the article correctly, the new venture will be a totally different restaurant, and Melt will stay where it is. Best of everything to both gentleman.
